Vegan Restaurant Seeks Funds for Seattle Food Truck

The Emerald City’s Plum Bistro has launched a Kickstarter project in hopes of opening a mobile vegan eatery.

Plum Bistro and Hillside Quickie are already beloved vegan hotspots in Seattle, WA, but they may soon add a nomadic member to their family of restaurants if owner Makini Howell’s new Kickstarter project is successful. Howell’s family (which includes her brother, acclaimed chef Ayinde Howell) founded its vegan restaurant empire more than 25 years ago and currently aims to open a food truck version of its popular upscale eatery, Plum Bistro. She and her coworkers have a goal of raising $28,000 for the project from online donors by November 9. The truck will serve dishes such as dairy-free mac ‘n’ cheese, tacos, tofu burgers, quinoa nachos, and even sushi, and will visit all of Seattle’s neighborhoods as well as parks, festivals, private parties, and local businesses.
