The Associated Press recently released an article on advocating for a Thanksgiving sans turkey. The New York Times’ popular food columnist and author Mark Bittman, who advocates for a mostly vegan diet, told the AP that swapping turkey with vegetarian alternatives is a great change to make come Thanksgiving. Bittman advises replacing the bird with sides including flavorful stuffing. Dianne Morgan, author of two Thanksgiving-related cookbooks, says that foods such as acorn squash and vegetable and grain-stuffed sugar as well as seasoned smoked tofu are great substitutes for the commonplace turkey.
