A new survey conducted by researchers from Johns Hopkins University on behalf of international food-service provider Sodexo has revealed a widespread shift toward plant-based eating at the company’s US facilities. Last January, Sodexo launched a Meatless Monday campaign in an effort to expand its meat-free options. Surveying 245 of Sodexo’s participating food-service sites, ranging from hospitals to government buildings, researchers found that approximately half of the sites reported an increase in the sales of plant-based entrées, while roughly 30 percent reported a decrease in meat purchases. Interestingly, Sodexo costumers at health-care facilities seemed to be more responsive to the campaign than those in other sectors, with nearly 42 percent perceived to have reacted positively.
