Diners in the Big Easy will now have an easier time finding healthy options. In a town revered for its Cajun and Creole cuisine, kombucha and green smoothies might seem out of place, but that’s a benefit, according to owner Joseph Stone. He tells The Times Picayune that the well-prepared vegetables found in his smoothies and salads will offer some balance to the typically heavy fare found in New Orleans. A former sufferer of arthritis and fibromyalgia, Stone was able to reverse his own health by adopting a more plant-based diet, and hopes to be able to offer fellow Southerners healthy fare. Along with chef Aime Havens, Stone plans to expand Superfood Bar from its current incarnation as a walk-up counter into a sit-down café in the near future.
