Late-Night Vegan Taco Shack Opens in Richmond, VA

A cruelty-free entrepreneur wants to show Richmond’s after-hours crowd that vegan food can be tasty, healthy, and affordable.

Richmond, VA will get a plant-based addition to its late-night dining scene with the opening of Café Verde, a vegan taco eatery started by local resident Ed Edge. Edge, who also owns RVA Vegan—a food truck that has been rolling through the city’s streets since 2011—tells richmondbizsense.com that Verde is simply a “taco shack that just happens to be vegan,” and the restaurant’s mission is to show the public that cruelty-free fare can be tasty, healthy, and affordable. All of Verde’s menu items will be $3 or less and the earnings will go toward supporting Have Heart, Edge’s non-profit organization that gives health classes to residents of Richmond’s housing projects.
