Residents of Dublin, OH decided to fight back against the city’s rising health care costs by implementing stress management counseling, financial initiatives and fitness training, but despite its best efforts, the health care costs of the Midwestern city’s 370 employees continued to rise. So Dublin infused veganism into its wellness program with lectures from plant-based health experts and cruelty-free cooking tutorials. After eight weeks, the percentage of hypertensive participants dropped from 20 to 3.7, they lost an average of 10.5 pounds, and reliance on medication was significantly reduced. “I definitely feel a lot better,” says one participant on forksoverknives.com. “I don’t want to put nasty junk that makes me feel bad into my body. I want to be as healthy as possible for as long as possible.”
