Boston’s new taco truck Taco Party is serving up vegetarian tacos and sides to patrons all over the city. The menu includes panko-encrusted tofu or citrus-marinated seitan tacos and Smokey Black Beans with Mexican Brown Rice. Keith Schubert, the man behind Taco Party, spent the last 12 years touring the world as a drum technician. According to his website, while traveling in California, Schubert picked up an “intense taco and burrito lust.” Tired of living out of a suitcase, he decided to localize his roaming to the streets of Boston. Schubert told The Daily Free Press the truck is eco-friendly with plans of composting and recycling systems and the possibility of running it on vegetable oil or biodiesel in the future.
