July 19, 2013
Silver Diner, with 15 locations spread throughout Maryland, New Jersey, and Virginia, recently began offering vegan options, boasting a healthier menu. There are nine additional plant-based dishes, and the chain’s executive chef Ype Von Hengst tells The Washington Post that 10 percent of Silver Diner’s menu is now vegan. New entrées include Santa Fe Roasted Veggies, featuring quinoa, eggplants, and Brussels sprouts; and dairy-free milkshakes for dessert. Hengst nixed the idea of faux meat early on in developing the new vegan and gluten-free offerings, explaining that his focus is on whole foods and vegetables.
