Thriving restaurants like Philadelphia’s Vedge, New York’s Candle 79, and San Francisco’s Millennium show that veganism and fine dining is a successful combination. Now, Chef Craig Vanis has taken to Kickstarter to bring the same cruelty-free sophistication to the Lone Star State with Bistro Vonish. Vonish was conceived as a supper club, and its outstanding success has prompted Vanis to turn it into a brick and mortar restaurant in east Austin. The menu will change regularly and be comprised of seasonal selections made from fresh, local produce. The fundraising venture aims to raise $20,000 by October 13, which will help Vanis secure a lease and begin renovations
