This week, most of us will celebrate Thanksgiving with a plethora of vegan dishes at the table. From store-bought holiday roasts and pies, homemade side dishes, restaurant pick-ups, and everything in between, a vegan Thanksgiving has never been easier. But it wasn’t always this way. The Tofurky holiday roast—made by Oregon-based Turtle Island Foods—celebrates 20 seasons this year. Developing the Tofurky after recognizing a need for a turkey-free option in the market, company founder Seth Tibbott created the now-ubiquitous centerpiece that has become a household word in America. Since then, the vegan meat company has sold more than 4 million of the savory soy-based feast.
