Fundraiser Started for Veg Fast Food Joint in TX

Kale salad, veggie burgers, and faux chicken sandwiches are on the menu of what could be Texas’ first fast food veg restaurant.

Austin may be a vegan oasis among Southerners, but the rest of the Lone Star State is still lacking in cruelty-free fare. Mike Behrend, co-owner of San Antonio’s Green Vegetarian Cuisine, is trying to change all that with his new prospective project, Earth Burger, a veg fast food restaurant that will serve savory and healthful dishes, such as a $5.00 Nacho Burger or Chik-n Sandwich, which diners can complement with a kale salad or hummus and carrots for $3.00. Behrend has taken to Kickstarter to raise the $40,000 that will be necessary to make Earth Burger operational, and as of press time, he has garnered 104 backers and raised $8,899. If Behrend’s Earth Burger comes to fruition, it will be Texas’ first all-veg fast food joint, and with 24 days left in the campaign, things look promising for the culinary entrepreneur.
