A vegan restaurant named Sprout is slated to open its doors in Catonsville, Maryland. Sprout will serve as a bastion of health, with fare made with locally sourced ingredients, all of which will be non-GMO and contain no refined sugars. According to The Baltimore Sun, Sprout’s menu includes a variety of different smoothies including the Smooth Operator (banana, avocado, mango, raspberry, and almond milk) and the Superman (hemp, spinach, pineapple, and strawberry), along with vegan renditions of classic American cuisine, such as a seitan Philly Cheesesteak. The restaurants’ two owners Enzo Fikru and Sarah Dunn, said they chose Catonsville, a community on the western edge of Baltimore, because they thought its open-minded residents would be receptive to a vegan restaurant. “Catonsville has more of a progressive, alternative mindset, that is willing to appreciate that type of cuisine,” they told The Sun. Sprout will have its grand opening next week.
