Houston’s first vegan food truck is set to open its doors this August and has launched a Kickstarter campaign to help make it happen. What began as a pop-up café in the Texas city, Ripe Cuisine is now going mobile with a custom-outfitted food truck serving healthy, organic food with global influences. Owner Stephanie Hoban is both a chef and dietician—and will be offering up current customer favorites like her Bistro Burger, Cornmeal Crusted Avocado Tacos, Enchiladas del Dia, and Tofu Banh Mi sandwiches. Desserts include the “Elvis” cupcake, a banana cupcake with peanut butter frosting and coconut bacon chips. The Kickstarter campaign ends July 30.
