It seems like a new vegan cheese launches every month these days, but scientists in the San Francisco Bay Area are experimenting with a formula that may be a first worldwide. Biologists at the 10th annual International Genetically Engineered Machine competition are attempting to extract casein proteins from yeast in order to make cheese. Instead of cow’s milk proteins, however, they’re using strands of human DNA and will then incorporate vegan replacements for lactose and milkfat. An Indiegogo campaign is planned for the future to help fund the idea.
