The Portland Press Herald recently profiled the eating habits practiced by vegan ultramarathoner Scott Jurek as he trekked across the Appalachian Trail in a record-breaking 46 days. The 14-state, 2,189 mile venture required more than 6,000 calories a day, which found the 41-year-old consuming 100 calories every half hour. To accomplish this and maintain a rapid pace, Jurek said he subsisted on squeezable sports packs, energy bars, and fruit while on the move. Breakfast—which began at 5:30am—consisted of coconut milk lattes and cold overnight oatmeal, while a second breakfast included home fries, salted coconut butter toast, yogurt, or a protein and fruit smoothie. Lunch and dinner usually came in the form of sandwiches, but for late-night meals, Jurek’s wife Jenny cooked coconut curry stir-fries with veggie burgers. Additionally, fans and supporters brought Jurek everything from avocado sushi to cinnamon rolls. “One man hiked miles to bring me a pizza,” Jurek said. “I did accept all this trail magic.”
