Last week, Christie Brinkley appeared on The Tonight Show with Jimmy Fallon to promote her new book Timeless Beauty, and attributed her own youthfulness in part to a vegan diet. The 61-year-old stunner, who is also an avid yogi and has her own vegan skincare line, went vegetarian 49 years ago after reading a graphic scene in Norman Mailer’s Miami and the Siege of Chicago. Brinkley says she incorporates as much color into her healthy diet as she can, which includes berries, lentils, chickpeas, avocados, nuts, seeds, and a vegan indulgence every once in awhile. “Right now I’m addicted to these things … called So Delicious,” Brinkley told Shape.com. “It is coconut and soy—it’s like a so-called healthy dessert. Lately I’ve been wanting to have one after my salad in the middle of the day and I think, ‘Oh, it’s not so bad,’ but that’s a habit I’m going to break now.” Timeless Beauty hit bookshelves on Tuesday and is already a bestseller on Amazon.
