Food Network Touts Vegan Chickpea Meringue

Popular cooking site publishes a recipe for vegan meringue, complete with step-by-step photos.

The Food Network has joined the vegan chickpea meringue trend, recently publishing a recipe on its website using the brine of chickpeas. “These meringues have a faint chickpea flavor and the same light and airy texture as the traditional cookies,” the website wrote. Food Network broke the recipe down into 14 simple steps, complete with photos of each part of the process. With only four ingredients and 30 minutes of prep, the site ranks this recipe as “easy.” Chickpea water was discovered as a suitable replacer for egg whites earlier this year, as the protein mimics that of egg whites, allowing people to whip it into a thick foam and use in baking. “You’ll never drain chickpea liquid down the sink again!” Food Network wrote. “Our tasters even preferred their malty flavor over regular egg white meringues.”
