Outside Magazine recently published an infographic outlining the history and upward trend of plant-based diets followed by athletes. The magazine first referenced former vegan track star Carl Lewis and his 1991 performance in the World Championships in Athletics in Tokyo, which he called “the best race of my life.” Only one year after becoming vegan, Lewis won multiple awards and broke records, and credited this feat to the absence of animal products in his diet. Now, in 2015, veganism is as easy as ever, and there’s a new generation of vegan athletes such as ultramarathoner Scott Jurek, climber Steph Davis, and NFL lineman David Carter, all of whom have been successful on a plant-based diet. The magazine even featured professional (vegan) surfer Tia Blanco’s veggie and quinoa bowl recipe and broke down the vitamins, protein, anti-inflammatory, omega-3s, and other nutrients that are present in the dish.
