After splashing in a pool or tossing a Frisbee, you’re going to need to eat, and nothing refreshes and refuels your body on a summer day like a fresh seasonal salad.
What You Need:
2 cups watermelon, cut into ½-inch cubes
2 cups cucumber, cut into ½-inch cubes
2 tablespoons lime juice
1 tablespoon minced jalapeño
Generous pinch of salt
What You Do:
Combine all ingredients in a large bowl. Allow the flavors to meld for approximately an hour before serving.
