Vegan Chocolate Cake Shines on Good Morning America

In honor of National Chocolate Cake Day on Wednesday, Good Morning America held a contest called “The Great Chocolate Cake Taste-Off” featuring three viewers who brought their winning recipes, including a vegan “high-carb, low-fat” chocolate coconut cake. Submitted by Samantha Parsons from Middletown, DE, the cake uses applesauce and vegetable purées to remain moist, while giving it more nutritional value and lowering fat content. Before tasting the cake, judge (and celebrity chef) Rocco DiSpirito said, “Well, it’s vegan. That means there’s no eggs and no cholesterol. High carb means you can carb-load with this cake,” adding, “I’m sure it tastes really good; I’ve had a lot of vegan cakes.” While Parsons did not win, former ESPN correspondent/segment host Jesse Palmer stated that he feels “better eating this cake, and it looks beautiful.”
