New vegan Mediterranean- and Middle Eastern-inspired, fast-casual eatery Shouk opened in Washington, DC today. Founded by Ran Nussbacher and backed by restaurateur Jessica Boufford, Shouk offers a healthy twist on comfort food with menu items such as pita sandwiches (which can be turned into rice and lentil bowls), salads, polenta fries, lentil patties, a cashew-based labneh yogurt dip, and Arabic coffee with cardamom. With widespread media attention and growing consumer demand, vegan restaurants such as by CHLOE, Veggie Grill, and Plant Power Fast Food have successfully launched fast-casual chains.
