Famed New York pizzeria Paulie Gee’s—known for its creative vegan offerings such as housemade cheese and sausage—opened a new Miami location last weekend. Housed in a former Chinese restaurant, the eatery offers four vegan pies including In Ricotta Da Vegan made with cashew-based ricotta cheese, housemade fennel sausage, baby arugula, and extra virgin olive oil—as well as vegan ice cream and sorbet. While not exclusively vegan, owner Paulie Giannone says he created a separate vegan menu to fulfill his customers’ requests. “It started as a demand, but I have developed an appreciation for our vegan offerings,” Giannone told VegNews. Paulie Gee’s recently expanded into other locations including Columbus, OH, Chicago, IL, and Baltimore, MD, with a new slice shop in the works for Brooklyn.
