A new fast-casual eatery called Greenspace Grille & Go—co-founded by cardiologist Joel Kahn, MD—will debut in the early part of 2018 in the Royal Oak suburb of Detroit. The restaurant will serve portable plant-based meals such as creative burgers, bowls, tacos, salads, baked goods, and raw juices. “‘Fast food’ and ‘healthy’ rarely occur in the same sentence,” Kahn said, “but that’s what we’re bringing to this busy stretch of Woodward.” The new concept is an offshoot of Kahn’s more upscale restaurant Greenspace Café, which he opened in 2015 with son Daniel and wife Karen in the Ferndale neighborhood. This summer, Kahn also launched a vegan food truck Greenspace Jungle Truck, which serves dishes such as jackfruit-filled sliders, macaroni and cheese, and Mexican street corn (which are also expected appear on the Grille’s menu) to further expand access to plant-based food near the Detroit area. Kahn has been a longtime proponent of consuming a whole foods, plant-based diet for optimal health and is the author of Dead Execs Don’t Get Bonuses and Your Whole Heart Solution.
