London-based catering company Grazing Catering added more than 100 plant-based dishes to its existing menu this week to meet customer demand for vegan options. “We’re putting the same passion and creativity for food into our vegan dishes as we do into all of our others,” Grazing CEO told media outlet Hospitality and Catering News. “No more vegan options as an afterthought and a sad salad or plate of fruit!” The company—which caters workplaces and venues—now creates its own seitan and offers inventive vegan dishes such as hay-smoked heritage carrots with toasted amaranth and dried cranberries, clay-baked celeriac “steak” with shaved truffles and grilled leeks, and vegan fried “chicken.”
