During a recent episode of the #EatForthePlanet podcast with Nil Zacharias, New York City-based vegan restaurateur Ravi DeRossi announced plans to expand his vegan empire. DeRossi plans to open 12 vegan eateries—possibly outside of NYC—in the next two years, the first two of which will be 24-hour vegan diner Doll Face and Avant Garden Sandwich Co.—an offshoot of DeRossi’s fine-dining restaurant Avant Garden. In 2016, DeRossi made a commitment to veganize as many of his 15 restaurants as possible and has since transformed Bourgeois Pig (now called Ladybird), Mother of Pearl, and Cienfuegos into vegan eateries. Earlier this year, DeRossi co-founded vegan bar Coup, the profits of which are donated to organizations defunded by the Trump administration.
