Swedish vlogger Therese Lindgren made the Guinness World Records’ largest vegan cake last week at a vegetarian cooking school in Stockholm. Weighing in at 462.4 kilograms (1,019 pounds and six ounces), the semolina cake was held together with almond-cream frosting and featured strawberries, lemon, and soy whipped cream on top. All ingredients were provided by Scandinavian retail chain Coop—which was able to deliver more flour and soy yogurt immediately when the crew ran out of the essential ingredients in the middle of baking. Guinness judge Pravin Patel was present during the baking process—wherein the six bakers working on the cake wore shirts with the message “I love animals and love cake”—to adjudicate the largest vegan cake in the world. “To break a Guinness World Records title has always been on my bucket list,” Lindgren said, “and now I’ve done it! I’m a vegan myself, and by breaking the largest vegan cake record title I want to put focus on animal rights, a cause that is very close to my heart.” The cake–which fed 2,000 people—was partially eaten on-site while remainders were sent to an animal-rights event and a local retirement home. The previous record-holder in the category was a raw vegan cocoa cake that weighed 338.9 kilograms (857 pounds and 6.04 ounces) made by 31 bakers at German hotel Essentis Biohotel Berlin last year.
