Paris-based Maisie Café will take residence at the Ritz Carlton hotel in Paris for one month starting May 15. The eatery will offer fresh juices and a selection of vegan food as part of Ritz Club’s wellness month. Newly developed dishes include vegan artichoke dip, quinoa salad with green asparagus tips, broad beans, and purple radish, chilled cauliflower soup with almond cream, lime and ginger, and two desserts—a coconut milk-based panna cotta and blueberry coconut milk mousse. Maisie Café founders Xavier Barroux and wife Isabella Capece will host a vegan cooking class on May 27 with private lessons available throughout the month. Stateside, luxury Miami-based 1 Hotel South Beach will open its first vegan restaurant plnthouse—an oceanview eatery helmed by famed vegan chef Matthew Kenney
