Vegan Shop Seattle Cookie Counter is Back in Action

Seattle’s beloved vegan ice cream shop has re-opened thanks to a whopping $10,000 raised by the local community.

Vegan ice cream shop Seattle Cookie Counter will host a grand re-opening on May 21 after a six-month hiatus. The shop closed due to financial strains last November after successfully crowdfunding both its initial food truck iteration and the brick-and-mortar shop in the Phinney Ridge neighborhood of Seattle. Owners Chelsea Keene and Chris Olson raised $10,000 from the local community via a GoFundme campaign recently to reopen their doors and re-launch the food truck this summer. The shop serves a variety of coconut milk-based ice cream, fresh-baked cookies, brownies, and several new menu items such as a matcha affogato made with a scoop of vanilla ice cream, whipped cream, matcha tea, sprinkles, and a maraschino cherry.
