Vegan couple Anibal and Monica Flores recently launched Phyto’s Vegan Eats, the first all-vegan hot dog cart on the streets of Las Vegas. The cart serves three hot dogs varieties: fakin’ bacon-topped Crispy Cowboy, jalapeno-spiked El Guey, and Korean-inspired Kimchi Kool; and a do-it-yourself dog that can be topped with items such as crispy onions, relish, and crushed chips. “It is very rare as a vegan to be able to walk to a street cart and order vegan food, and we want to change that,” Monica Flores told local media outlet Vegans Baby. “It’s a simple comfort food that people of all ages enjoy, whether vegan or non-vegan, and we are so happy to be able to bring something like this to such a loving and supportive community.” Once the couple secures a production kitchen, they plan to expand the Phyto menu to include plant-based dishes such as Shepherd’s Pie, ramen, curries, pizza, and tacos.
