HealthyTOKYO Cafe & Shop opens today in Terminal 2 of Haneda Airport in Tokyo, Japan, as the first vegan eatery inside of the city’s international airport. In addition to beverages such as lattes, matcha-based drinks, tea, homemade ginger ale, lemonade, and Japanese and American craft beer, the café serves plant-based quiche, lasagna, salads, and sandwiches. Dessert offerings include New York-style cheesecake, a variety of baked goods, and five flavors of “melon pan”—a traditional Japanese sweet bun that is reminiscent of Mexican pan dulce. “We really wanted to make a café that everyone can enjoy,” David Israelsson, Head of Operations at HealthyTOKYO, said. “While all of our offerings are plant-based, we have created dishes that will be loved by vegans and omnivores alike. Our menus are designed to appeal to the tastes of locals and the increasing number of visitors to Japan.” The retail portion of the shop sells gifts and snacks, including matcha-based products, nut butters, and CBD oils. HealthyTOKYO opened to serve an expected influx of tourists—an increasing number of which it anticipates will demand plant-based foods—during the 2020 Olympics in Tokyo.
