Friends Open Eatery Inspired by Impossible Burger

Vegan fast-food restaurant Monty’s Good Burger will open in Riverside, CA. Monty’s menu will include single and double burgers made with the Impossible Burger, julienne fries, tater tots, and kale Caesar salad. The eatery will use mostly local ingredients sourced from within a 30-mile radius. Founded by couple Derric and Erin Swinfard and several of their friends from the food and music industries, Monty’s was inspired by the Impossible Burger. “We came across the Impossible Burger at Crossroads Kitchen in LA about 18 months ago,” co-founder Bill Fold told VegNews. “Once it became available to purchase wholesale, we thought it would be an incredible opportunity to open Monty’s at the Riverside Food Lab in Riverside, CA.” The eatery—the name of which is inspired by the one of the owners’ dog, Monty—made its soft debut at this year’s Coachella festival, while the permanent shop will be located at Riverside Food Lab, a communal food hall featuring several eateries and bars.
