Two-in-one vegan restaurant Fire & Water will open in New York City this year. Vegan restaurateur Ravi DeRossi is behind the concept which will feature two restaurants divided by a glass wall. On one side, diners can expect a 16-seat sushi counter with plant-based dishes served omakase-style, along with a selection of sake. The other, more formal side will seat 36, feature dim-sum cart service, neon and red decor, and a selection of beverages such as beer, wine, and non-alcoholic cocktails. DeRossi’s corporate executive chef Anthony Mongeluzzi will oversee the menu at both eateries. Mongeluzzi also develops menus for DeRossi’s other vegan restaurants including Avant GardenMother of Pearl, Cienfuegos, and Ladybird—the latter of which is located only one door away from upcoming Fire & Water. In 2016, DeRossi pledged to veganize as many of his (then) 15 restaurant and bar holdings as he could. DeRossi plans to open other vegan eateries, including a second location of Avant Garden coming to Brooklyn this summer.
