Online grocery Peapod released today a new vegan meal kit created by famed vegan chef Chloe Coscarelli. The new General Tso’s Tofu meal kit includes pre-measured ingredients and a recipe that can be added to shoppers’ online carts. “My goal has always been to make vegan cooking easier and more enjoyable for at-home chefs,” Coscarelli said. “Vegan doesn’t have to mean bland and boring, and I’m really excited to share this General Tso’s Tofu meal kit with everyone. This is my first meal kit, so by partnering with Peapod, I’m hoping it will solve some mealtime challenges people are facing.” Peapod is also promoting four recipes on its website from Coscarelli’s new cookbook Chloe Flavor. “Partnering with Coscarelli and co-creating a meal kit with her is the perfect way to bring fresh ideas to vegans, vegetarians, flexitarians, or anyone just looking to embrace more meatless meals,” Peapod Senior Vice President of Merchandising Spencer Baird said. In addition to creating Peapod’s vegan meal kit, Coscarelli opened new vegan restaurant Chef Chloe and the Vegan Cafe in Miami last month and filed a lawsuit to regain control of her name from the by CHLOE chain she co-founded in 2015.
