New restaurant Greedi Vegan opened late last month in the Crown Heights neighborhood of Brooklyn, NY. Founder Leticia Daring, who has been vegan since her early childhood, worked in the fashion industry for 29 years before opening Greedi Vegan, drawing inspiration for menu items from her southern roots and her travels to 26 countries. The menu consists of nachos topped with vegan beef and cheese, “Greedi Bowls” filled with quinoa-breaded fried chicken, crab-cake sliders topped with caramelized onions, and a seperate weekend brunch menu that features grits, pancakes, overnight oats, fried vegan fish, and tofu scrambles. “Vegan food can be just as diverse and tasty as food created for a carnivorous palate—sometimes even better,” Daring said. “The goal is to excite vegans and convert carnivores one plate at a time.”
