Vegan baker Cayden Fielder recently launched The Last Course—a monthly dinner party that features four (or more) courses of vegan desserts. Fielder serves high-end desserts such as Tres Leches Cake made with condensed plant-based milk in lieu of dairy, corn cookies inspired by milk-and-cereal flavored cookies made by Momofuku’s Milk Bar, and yam pie topped with aquafaba-based marshmallow fluff. “They don’t think they have the option to try higher-end desserts,” Fielder explained to media outlet Orlando Sentinel about local diners looking for cruelty-free dessert options. Fielder also operates local vegan shop Caycakes Bakery where he makes cake jars, cookies, brownies, and custom cakes. When it comes to career satisfaction, the creative vegan baker describes The Last Course—which costs $40 and includes champagne and coffee—as his “cherry on top.”
