New vegan concept The Country Punk Kin launched last month in Bristol, England. The eatery is a pizzeria that operates out of a boat along the city’s Kennet & Avon Canal. The mobile shop offers six varieties of wood-fired pizzas made with a sourdough crust (which is fermented for 72 hours) and topped with house-made items such as mozzarella, cheddar, Parmesan, pepperoni, pulled “chicken,” and ground chili “beef,” along with non-pizza items such as vegan Cornetto ice cream cones. Stateside, vegan pizza options continue to grow, including chef Matthew Kenney’s upscale vegan pizza restaurant Double Zero, which is slated to expand to locations in four states by January.
