Vegan Chia Berry Breakfast Pudding

You can prep this tasty and nutritious breakfast in individual jars a few days in advance to grab and go on busy mornings.

The chia seeds in this recipe from the Ageless Vegan cookbook provide protein and essential fiber, with the added bonus of promoting smoother skin. Add a sprinkling of chopped vegan dark chocolate for a decadent, antioxidant-loaded flavor! 

What you need:

½ cup chia seeds
1¾ cups unsweetened almond milk
1 tablespoon maple syrup
¼ teaspoon vanilla extract
⅛ teaspoon salt
½ cup blackberries
¾ cup blueberries
¾ cup raspberries
2 tablespoons raw almonds, chopped

What you do:

  1. In a bowl, combine chia seeds, milk, maple syrup, vanilla, and salt. Cover, place in refrigerator, and let sit for at least 2 hours or overnight.
  2. Serve topped with berries and almonds.
