
Creamy Vanilla Chai Protein Pudding

This chia pudding infused with chai spices takes just minutes to prepare, and you’ll wake up to the most delicious, creamiest breakfast to savor with your morning coffee or tea. And our pudding is extra special because it’s a great source of plant protein (the perfect way to start your day) from both the chia seeds and the addition of vanilla chai Just One plant protein powder.
What you need:
6 tablespoons Just One Vanilla Chai Plant Protein Powder
2 cups unsweetened oat milk
5½ tablespoons chia seeds
2 tablespoons maple syrup
⅛ teaspoon ground vanilla bean (or 1 teaspoon vanilla extract)
¼ teaspoon ground cinnamon
For serving: fresh fruit, granola, coconut flakes, chocolate chips, or nut butter
What you do:
- Into a blender, add Just One protein powder and oat milk. Blend until smooth.
- Add chia seeds, maple syrup, vanilla bean or extract, and cinnamon. Stir with a spoon until fully incorporated. Let sit 5 minutes, and stir again to prevent clumping.
- Pour into a large glass jar with a lid and refrigerate overnight. When ready to eat, serve with fresh fruit, granola, coconut flakes, chocolate chips, or nut butter.
