This New Austin Restaurant is All About Vegan Cheese

Vegan cheese shop and grocery store Rebel Cheese will open in Austin this summer. As the name suggests, the shop will offer a variety of vegan cheeses in flavors such as cheddar, mozzarella, Brie, Havarti, and an aged cashew-based bleu cheese infused with vegan probiotics. Rebel Cheese—which touts that it sells “unique artisan vegan cheeses that taste the same, if not better, than their dairy counterparts”—will also offer carrot lox, tofu eggs, and vegan housemade meats, including bacon, pepperoni, and corned beef. The shop will serve foods prepared with these items, including vegan versions of traditional meat-and-cheese boards accompanied by wine.
