Need to veganize your family’s favorite carrot cake recipe? Vegan egg-replacers are designed to give baked goods the same texture and rise of chicken eggs. Simple store-bought options include Follow Your Heart’s VeganEgg, Ener-G, or Bob’s Red Mill Vegan Egg Replacer. All of these can replace chicken eggs in most cake, cookie, muffin, and quick bread recipes, and the Bob’s Red Mill product also includes instructions on replacing just yolks or egg whites. For a homemade option to replace whole eggs, ¼ cup of unsweetened applesauce mixed with ½ teaspoon of baking powder can be substituted for cookies and quick breads, and a flax egg (1 tablespoon of ground flax mixed with 3 tablespoons of warm water, let sit for 5 minutes to gel together) works wonders in many brownie and cake confections. When it comes to more delicate desserts that rely on whipped egg whites, aquafaba cannot be beat (pun intended). For savory dishes
Whip up an egg-cellent Easter brunch with any one of these vegan egg products. Each can be scrambled, baked into a savory quiche, or flipped into a fluffy omelet. JUST Egg and Spero Foods’ Scramblit both come in liquid form and can also act as reliable custard bases for French toast or hearty breakfast bakes. Follow Your Heart’s VeganEgg is a powder that transforms into a satisfying scramble when you add water. Find JUST and Follow Your Heart at a number of supermarkets and specialty stores, from Gelson’s to Whole Foods. Scramblit is available online and through a few independent vegan markets (such as Bestie’s Vegan Paradise in Los Angeles), though the company is working on wider distribution.
