Miami-based company Peekaboo will debut its first vegan ice cream flavors online this fall. Founded in January by Jessica Weis Levison, the brand currently offers dairy ice cream flavors with hidden vegetable ingredients, such as chocolate spiked with cauliflower, strawberry infused with carrot, cotton candy featuring beets, and mint chip made with spinach. “We have several vegan flavors in the pipeline, as well as a few favorites with a twist,” Levison told Foodnaviator-USA, adding that the base for the vegan flavors is a secret for now. “The product bridges the gap between what we can’t get enough of (ice cream) and what we don’t get enough of (veggies),” Levison said. “Peekaboo makes veggies accessible to all.” The vegan line will be available in retail outlets such as Whole Foods, Weis Markets, and Safeway by Spring 2020.
