Earlier this month, Truth & Tonic opened on the fourth floor of The Venetian Resort as the first fully vegan restaurant on the Las Vegas strip. Executive chef Pete Ghione uses antioxidant-rich ingredients to create dishes such as whole grain ciabatta toasts, frittatas (made with vegan egg replacer JUST Egg), chicken avocado wraps, and salads, along with mimosas, mojitos, and non-alcoholic beverages. Wellness company Canyon Ranch transformed the existing café inside its spa into Truth & Tonic to keep up with its clientele’s growing shift-toward plant-based foods. “By incorporating plant-based ingredients that are equally unexpected and satisfying to our menu, Truth & Tonic makes the overall journey to wellness a more desirable and enjoyable experience,” Ghione said. “Our diet is an integral piece to one’s well being and as the first fully vegan restaurant on The Strip, we are excited to bring this health-conscious option to our guests.” Truth & Tonic also features a to-go counter making it easy to purchase a meal and enjoy it at the Venetian pool nearby.
