Vegan brewery Pig Minds Brewing recently underwent a massive expansion at its location in Machesney Park, IL. An additional 9,000 square feet was added to its existing 4,500-square-foot space. It features a wood-fired pizza oven, expanded bar area, a mezzanine on the second floor for overflow and private parties, 170 additional seats inside, and an outdoor patio that seats 150. The renovation also includes a new 15 barrel BBL exposed brewhouse that triples its previous brewing capabilities. 

Pig Minds Brewing expanded its menu to include 16 house-brewed beers on tap. The food menu features eight to 10 signature house-made pizzas, weekly specialty pizzas, and dessert pizzas that feature house-made cheeses, sauces, and vegan meats; and a variety of sandwiches and appetizers such as bacon grilled cheese, roasted sweet potato and black bean tacos, and vegan wings with ranch dipping sauce. 

“With veganism becoming more mainstream, we’ve been very fortunate to expand alongside it,” Pig Minds Brewing founder Brian Endl told VegNews. “The growing acceptance of this industry has been exciting. We have tremendously loyal customers who have shown us unbelievable support.”

Pig Minds Brewing’s new space is expected to open when the city’s COVID-19 restrictions on indoor dining lift. In the meantime, the brewery is open for patio service, takeout, curbside pickup, and delivery.
