This week, vegan delivery-only restaurant Underground Burgers opened in a secret location in Las Vegas. The curated menu offers a selection of three oversized Impossible Burger-based burgers, a “fire” chicken sandwich, and coconut ice cream-based shakes. Underground Burger also serves French fries and tater tots loaded with nacho cheese, caramelized onions, and its signature secret sauce—akin to In-N-Out’s animal-style fries. “We saw that Vegas was missing good messy burgers. Like the kind you eat when you’re starving, drunk, or hungover. There’s also a huge demand for delivery right now,” Underground Burgers’ anonymous owner said. “But even once the pandemic is over, people will be accustomed to getting things on demand and we want to give the people what they want.”

Why the secrets?
Underground Burgers operates out of a ghost kitchen in an undisclosed Las Vegas location and was created by a team that wishes to remain anonymous. “We just wanted to have fun with the whole concept so people can wonder who’s behind it and where [it’s] coming from,” the mysterious owner said. “Don’t worry though, it’s not coming from our house. It’s coming from an all plant-based kitchen. We’ve had a lot of fun coming up with this concept and we are excited to get it out there.”

It seems as though others are excited about the concept, as well. On opening day, Underground Burgers generated so much buzz that out-of-range customers drove to parking lots within the eatery’s delivery area to receive their orders. The eatery is currently offering delivery in the Las Vegas area and plans to expand its delivery radius based on demand and will soon add delivery options through Postmates and UberEats.
