Bitter Gourd Curry

Don’t fear the name—bitter gourd is incredibly good for you and super tasty in this curry.

What you need:

2 tablespoons cooking oil
1 teaspoon cumin seed
1 onion, finely chopped
2 green chilies, finely chopped (optional)
2 tomatoes, chopped
1 teaspoon ginger-garlic paste
1/4 teaspoon dried mango powder
1/4 teaspoon red chili powder
1/4 teaspoon turmeric powder
1/2 teaspoon coriander powder
Salt, to taste
3 medium-sized bitter gourds, deseeded and cut into thin slices (dark green variety)
1/8 teaspoon sugar
1/4 teaspoon garam masala
Hot basmati rice, for serving 

What you do:

  1. In a deep saucepan over medium-high heat, heat oil. Add cumin. Once it begins to sizzle, add onion and green chilies and fry tender and brown.
  2. Add tomatoes, ginger-garlic paste, dried mango powder, red chili powder, turmeric, coriander, and salt and sauté to blend. Continue cooking until the oil separates.
  3. Add bitter gourd, cover, and cook for 7 to 8 minutes or until bitter gourd is cooked through. Sprinkle sugar and garam masala on top and serve hot with basmati rice.
