Broccoli Spread & Dip

This is an absolutely scrumptious dip that tastes wonderful on crackers or spread on a sandwich with fresh tomatoes and lettuce.

Serves: 2 cups

Makes 2 cups

What you need:

  • 4 cups broccoli florets (or two small heads)
  • 2 stalks celery, diced
  • 1 dill pickle, diced
  • 4 teaspoons Dijon mustard
  • 1 tablespoon vegan mayonnaise

What you do:

  1. Steam broccoli florets until soft, about 8 minutes.
  2. In a shallow bowl, mash steamed broccoli. Add celery and pickle, and stir in mustard and vegan mayonnaise.
