Vegan Devonshire Cream

Devonshire or clotted cream, made by scalding unpasteurized milk and separating out the clotted cream solids, is the traditional English accompaniment to scones.

Makes 1-1/2 cups

What you need:

  • 1 12.3-ounce package Mori-Nu silken tofu, extra firm
  • 1/4 cup raw cashews
  • 1/4 cup raw pine nuts
  • 2 tablespoons brown rice syrup
  • 2 tablespoons lemon juice

What you do:

  1. In a food processor or blender, combine all ingredients and process for several minutes or until smooth. 
  2. Transfer the mixture to a container, cover, and chill for an hour or more to thicken. 
  3. Use as a topping for scones, fruit, pie, or cake.
