Renowned Culinary School Hosts Vegan Pop-Up Restaurant

Miami-based Johnson & Wales University serves up plant-based cuisine to local diners.

Students at Johnson & Wales University’s College of Culinary Arts recently opened The Hungry Bull, the school’s first-ever all-vegan pop-up restaurant, for a temporary run. As part of their coursework, the aspiring chefs served 100 diners on the North Miami campus a three-course lunch that included appetizers, drinks, and dessert containing no animal products. Teaching assistant and vegan Kelsey Carter led the effort and helped her team of students set records for the most seatings and fastest turnaround in the class’ history. The school also has a vegan professor chef, vegan director of culinary operations, and vegan interim campus president—making it a hotbed of plant-based academic innovation.
