Students Bring Vegan Dessert Truck to Las Vegas

A college class places a $50,000 bet on a mobile vegan business venture that will serve frozen treats to the desert city’s residents.

University of Iowa students are infusing plant-based ingenuity and entrepreneurship into downtown Las Vegas as they make plans to bring a vegan food truck to Sin City come summertime, reports the Las Vegas Sun. The four-wheeled vegan endeavor Frozendipity is an assignment for the class, Reimagining Downtown, which was started by UI liberal arts Professor David Gould. The truck is described on the students’ Facebook page as a “nostalgia-inducing, renovated ice cream truck serving raw, vegan treats,” which will serve as “an introduction to healthy foods.” The junior entrepreneurs have a budget of $50,000, donated to them by Downtown Project, an organization Zappos CEO Tony Hsieh started three years ago.
