A new study by Technomic, a foodservice market research firm, has found that more than one fifth of college students are following a diet with limited or no meat. Fifteen hundred students were surveyed on their eating habits, and 21 percent identified as being vegetarian or vegan, eating only certain types of meat, or eating meat only occasionally. Additionally, only 28 percent said that they were satisfied with the healthy options at their college or university. Sara Monnette, director of consumer research at Technomic, sees these statistics as an opportunity for campuses to upgrade their dining programs in order to accommodate the demands of their students, stating, “Operators on and off campus could attract more students and increase the frequency of visits by refining their menus based on students’ desires.”
